Vanilla Pistachio Mylk

Who needs coffee when you can get a morning high with pistachio mylk? Cooked with hot spices, this nourishing drink is an excellent addition to your ayurvedic breakfast.

INGREDIENTS (4 PORTIONS)
  • 500 ml of water
  • 80 g pistachios, soaked overnight
  • 2 tbsp coconut blossom sugar 
  • 1⁄4 tsp ground vanilla
  • 1 pinch of salt
  • 1/2 tsp cinnamon
  • 1⁄4 tsp ground clove
  • 1⁄4 tsp cardamom
  • 1⁄4 tsp ground ginger 
  • 1⁄4 tsp ground fennel
METHOD
  1. Put all the ingredients in a high-speed blender and blend until smooth for about a minute.
  2. Strain the pistachio mylk through a nut milk bag or clean kitchen towel into a bowl. Gather the top ends and squeeze out vigorously. Pour the drink into a clean bottle or pitcher.
  3. To serve, heat approx. 125 ml of the pistachio mylk in a small saucepan. Froth it up with a milk frother. Pour into a glass or mug, sprinkle with chopped pistachios and enjoy warm. Add more sugar for some extra sweetness.

Note: The pistachio mylk does not foam as good as oat or soy milk.

WHY IS IT GOOD?

Pistachio mylk is a healthy alternative to plant-based drinks made from cashew nuts, almonds or oats: the green nuts are packed with high-quality protein, iron and vitamin e. The mylk tastes great on its own, as a baking ingredient or with granola. You can even cook your porridge with it!
