Vanilla milk rice with warm berries

Milk rice with warm berries is the perfect light lunch for hot summer days, but I also love to eat it for breakfast on colder days as it is super comforting because it reminds me of when my mum used to cook milk rice for me and my siblings. This recipe is an allrounder and you can easily change it up with other spices or toppings.

Vanilla milk rice with warm berries recipe

INGREDIENTS (FOR 3-4 PORTIONS)

FOR THE MILK RICE

  • 250 g milk rice
  • 900 ml coconut drink or plantbased milk (not the thick coconut milk!)
  • 1 tsp vanilla powder
  • 3 tbsp coconut sugar
  • juice from 1/4 lemon

FOR THE BERRIES

  • 100 g fresh blueberries
  • 1 tsp coconut oil
  • 1/2 tbsp cinnamon
  • 1/2 tbsp coconut sugar

OPTIONAL

  • coconut flakes
  • edible flowers
  • other toppings
METHOD
  1. In a pot, heat up the milk and vanilla powder until it starts to boil. Stir in the rice and give it a good stir.
  2. Let cook until the rice is soft (appr. 20-25 minutes) and keep stirring every 3-5 minutes. If you feel like the rice is not soft enough towards the end, add some more milk and let the rice cook a bit longer.
  3. Stir in coconut sugar and lemon juice.
  4. In a little pan, heat coconut oil and add blueberries. Sprinkle with cinnamon and coconut sugar and let cook for 10 minutes, until the berries are soft and almost liquidy. I like to toss the pan every now and the inbetween.
  5. Serve warm milk rice with cooked blueberries and sprinkle with coconut flakes and edible flowers like rose petals. If you like to add more sweetness, feel free to top the rice with maple or date syrup!
