  • 100ml plant-based drink (e.g., rice milk)
  • 50ml maple syrup
  • 3 tbsp carob powder
  • 150g amaranth or buckwheat flour (can also use spelt)
  • 1 tsp baking powder
  • A pinch of salt
  • 100g chopped vegan dark chocolate (optional)
  • 80g chopped walnuts
METHOD
  1. Preheat your oven to 180°C (350°F) and prepare a muffin tin by lining it with paper cups or lightly greasing it with coconut oil.
  2. Blend the wet ingredients: In a food processor, combine the chunked cooked pumpkin, apple sauce, plant-based drink, and maple syrup. Add the carob powder and blend until smooth.
  3. Mix the dry ingredients: In a large bowl, mix together the flour, baking powder and salt.
  4. Combine wet and dry ingredients: Pour the blended wet ingredients into the dry ingredients, stirring until combined.
  5. Add the extras: Fold in the chopped dark chocolate and walnuts, ensuring they are evenly distributed throughout the batter.
  6. Fill the muffin cups: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full to allow for rising.
