The fudgiest Carob Brownie Bites

Are you craving a sweet treat that satisfies your sweet tooth without compromising your health goals? Look no further than these Vegan Carob Brownie Bites. Perfectly fudgy, completely gluten-free, and made with pumpkin, these brownies offer a delicious way to indulge mindfully.

Why make Vegan Carob Brownie Bites?

These brownie bites are not just ordinary treats – they’re a healthier alternative to traditional brownies. By swapping out cocoa for carob, these bites provide a naturally sweet and slightly earthy flavour that complements the richness of the pumpkin. Pumpkin is a great source of vitamins A and C, fiber, and antioxidants, while carob provides calcium and is caffeine-free. Sprouted amaranth flour adds a robust protein profile and is easier to digest than traditional flours. The inclusion of walnuts provides healthy fats, essential for brain health. Moreover, being vegan and gluten-free, they are suitable for a wide range of dietary preferences and allergies.

Recipe for the Carob Brownie Bites

INGREDIENTS (for 10 bites)
  • 200g cooked pumpkin (chunked or puréed)
  • 200g unsweetened apple sauce
  • 100ml plant-based drink (e.g., rice milk)
  • 50ml maple syrup
  • 3 tbsp carob powder
  • 150g amaranth or buckwheat flour (can also use spelt)
  • 1 tsp baking powder
  • A pinch of salt
  • 100g chopped vegan dark chocolate (optional)
  • 80g chopped walnuts
  1. Preheat your oven to 180°C (350°F) and prepare a muffin tin by lining it with paper cups or lightly greasing it with coconut oil.
  2. Blend the wet ingredients: In a food processor, combine the chunked cooked pumpkin, apple sauce, plant-based drink, and maple syrup. Add the carob powder and blend until smooth.
  3. Mix the dry ingredients: In a large bowl, mix together the flour, baking powder and salt.
  4. Combine wet and dry ingredients: Pour the blended wet ingredients into the dry ingredients, stirring until combined.
  5. Add the extras: Fold in the chopped dark chocolate and walnuts, ensuring they are evenly distributed throughout the batter.
  6. Fill the muffin cups: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full to allow for rising.
  7. Bake for 20-25 minutes.
  8. Let cool for 10-15 minutes, then invert onto a wire rack to cool completely.

Serving Suggestion: These brownie bites are best enjoyed warm for a gooey chocolate experience but are also excellent as a snack or a healthier dessert option. Store in an airtight container to keep them fresh.
