Coconut Caramel Slice: Healthy Snacking

Coconut Caramel Slice: A healthy treat featuring a coconut cookie crust, gooey caramel and rich dark chocolate. You are going to love these easy no-bake vegan cookie caramel slices made with whole food ingredients – they are so so good. Coconut Caramel Slice Recipe

INGREDIENTS (10 SLICES)

for the cookie layer:

  • 60 g pitted dates
  • 50 ml coconut milk
  • 100 g oats
  • 50 g desiccated coconut

caramel:

  • 100 g pitted dates
  • 3 tbsp oat milk
  • 3 big tbsp almond butter
  • 1/2 tsp ground vanilla
  • 1/4 tsp sea salt

for the chocolate cover:

  • 100 g dark chocolate
  • coconut flakes, cocoa nibs, sea salt flakes
METHOD
  1. For the cookie layer, place dates and coconut milk into a food processor and pulse until smooth. Add oats and desiccated coconut. Pulse a couple of times to incorporate, then transfer the mixture to a lined baking dish and press down evenly. 
  2. For the caramel, blend dates and oat milk until smooth. Add the rest of the ingredients and blend until you get a smooth consistency. If needed, add some more oat milk. Pour the caramel on top of the cookie layer and spread evenly with a spoon. Freeze for one hour.
  3. For the chocolate layer, melt the chocolate and pour over the hardened caramel layer. Sprinkle with coconut flakes, cocoa nibs and sea salt flakes. Cover and refrigerate again for one to two hours.
