Recipe for the Pea Mint Tahini Dip

INGREDIENTS (for 2 portions)
  • 1 cup cooked peas (fresh or thawed if using frozen)
  • 2 tablespoons white tahini
  • juice of 1/2 fresh lemon
  • 2 tablespoons water
  • 1/2 teaspoon salt (adjust to taste)
  • Handful of fresh mint leaves, finely chopped

  • Optional: Extra virgin olive oil for drizzling and hemp seeds for topping

METHOD
  1. If using fresh peas, cook them until they are tender. If using frozen peas, thaw them to room temperature.
  2. In a blender or food processor, combine the cooked peas, tahini, fresh lemon juice, water and salt. Blend until you achieve a smooth and creamy consistency. If needed, add more water in small increments to reach your desired thickness.
  3. Add the finely chopped mint leaves to the blended mixture. Pulse the blender a few times to incorporate the mint into the dip. The mint should be well distributed but still leave small, visible flecks for texture.
  4. Taste the dip and adjust the salt if necessary. You can also add more lemon juice for a zesty kick. Refrigerate the dip for at least 30 minutes before serving.
