Chai Porridge with spicy apples

There’s nothing quite like a warm, comforting breakfast to kick off your day. The past week, my mornings have been all about this incredible Chai Porridge with Spicy Apples. It’s a symphony of flavours and textures – creamy oats infused with warming chai spices, sweet and spicy caramelised apples and a bot of a crunch from the hemp seeds. It’s honestly become my breakfast on repeat, and I’m here to share this deliciousness with you!

Recipe for the Chai Porridge with spicy apples

INGREDIENTS (for 1 portion)
  • ½ cup rolled oats
  • 1 tablespoon ground flaxseed
  • ¾ cup unsweetened rice milk (or other plant-based milk)
  • ¼ cup water
  • ½ teaspoon chai spice blend
  • 1 tablespoon maple syrup (or other sweetener)
  • Pinch of salt

For the Spicy Apples:

  • 1 apple (sliced thinly)
  • ½ tablespoon coconut oil
  • ½ teaspoon ground ginger
  • Pinch of cinnamon
  • Splash of water

Toppings (Optional):

  • 1 tablespoon almond butter
  • 1 tablespoon hemp seeds
  • Pinch of chai spice blend
METHOD
  1. Cook the porridge: Combine oats, flaxseed, rice milk, water, chai spice, maple syrup, and salt in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Reduce heat and simmer for 5-7 minutes, or until oats are cooked through and porridge reaches desired consistency.
  2. Spice up the apples: While the porridge cooks, heat coconut oil in a separate pan over medium heat. Add sliced apples, ginger and cinnamon. Saute for 5-7 minutes, or until apples are softened and slightly caramelized. Add a splash of water if the pan gets too dry.
  3. Assemble and enjoy! Pour your creamy chai porridge into a bowl. Top with the delicious spiced apples, a dollop of almond butter (if using), a sprinkle of hemp seeds, and an extra pinch of chai spice for a flavor explosion.

Tips

  • Feel free to adjust the sweetness with additional maple syrup to your taste.
  • Don’t have rice milk? Use any plant-based milk you enjoy, such as almond milk or oat milk.
  • For thicker porridge, use less liquid. For a thinner consistency, add more water or milk.
  • No chai spice blend? Make your own by combining ground cinnamon, cardamom, ginger, cloves, and black pepper.
  • Leftovers? Store the porridge in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop with a splash of milk.
