Almond Blackberry Ganache Slices

These Almond Blackberry Ganache Slices are sure to sweep you off your feet: Every bite is filled with rich chocolate, zesty blackberry and crunchy nutty flavours. The indulgent snack is sure to satisfy your sweet tooth without all the unhealthy ingredients. Not only are those slices vegan and sugar-free, but they are also incredibly delicious. With a few simple steps and ingredients, you can easily make them at home – so let’s get started!

  • For the base:
  • 1 cup almond meal (can sub with cashew meal or any grounded nuts)
  • 2 tbsp coconut flour
  • 2 tbsp cocoa powder
  • pinch of salt
  • 2 tbsp coconut oil
  • 4 tbsp coconut syrup (or any other sticky syrup)
  • 100 g black- or raspberries
  • For the ganache:
  • 100 g dark chocolate
  • 160 ml coconut cream
  • 2 tbsp cashew butter
  1. Start by combining almond meal, coconut flour, cocoa powder and salt in a bowl. Add coconut oil and syrup and combine until a dough forms. Line a baking pan with parchment paper, pour in the mixture and evenly press it down with your fingers.
  2. Spread the berries over the layer and put the baking pan in the fridge.
  3. Next, finely chop down the chocolate (you can even use a grater for it) und put it in a little pot. In separate pot, heat up the coconut cream until it almost starts to boil. Pour the coconut cream over the chocolate and let sit for one minute. Then start stirring the mixture until the chocolate is molten. Add cashew butter and keep stirring until the ganache gets thick and silky. 
  4. With a spoon, spread the ganache over the first layer and smoothen out with a spatula. Sprinkle with cocoa powder, coconut flakes or cocoa nibs and store in the fridge for the next two hours. 
  5. To serve, use a sharp, hot knife to cut into desired pieces.
